I was originally going to make a green salad with tomato and avocado, but realized I’d brought walnuts for my morning oatmeal and a mango to cut up for a snack as well. So I put them together and saved the tomato for another day and it is delicious! When I cut the mango I made sure to do it over the salad so all of the juices went on the lettuce. Let me know what you think if you try this. Did you use dressing? I didn’t think it needed one at all.

It’s funny how it happened. I was pawing through my lunch bag and shuffling the walnuts out of the way, and wishing I could have brought strawberries because that salad is so yummy too. Then I saw the mango and thought, well, what about mango and walnuts? Avocado, does that work with mango? So I googled it and indeed, I was not the first to make this combination, and it got pretty good reviews everywhere (most had salad dressing with them). So I spent about 5 minutes cutting everything up and had this super fresh and delicious salad to enjoy for my lunch hour. Must remember that this would work on a day I have to run to a supermarket for my lunch!
