
It was raining cats and dogs on the way up north to the cabin but we still had to have lunch, picnic weather or not! Richard cut up a large bin of carrots and celery and grilled up some flattened chicken thighs on Thursday in preparation for today’s lunch. I sliced up a tomato, onion, and avocado, and assembled sandwiches for everyone. While straddling the boat tongue under the hatch of our Honda Pilot at a gas pump in a downpour. People, if you are determined to eat real food, I’m here to tell you that with a little preparation, it is possible under ANY circumstances!

Gosh, you have made me real hungry for lunch now!
Even cold, these sandwiches were delicious. I can only imagine how good they’d be with the chicken cooked fresh and hot!
Oh dear, that looks lovely. I had never thought of using chicken thighs for sandwiches–great idea. I’ll bet the meat is much moister than the chicken breast I usually use. The color on your sandwiches makes them look so appetizing!
We pretty much only use chicken thighs now. It’s surprising to me because I’ve always *hated* chicken thighs – until I tasted pastured chicken. Not only are they more moist, but they’re so much more flavorful as well. I highly recommend them!
