Have you heard?  People are buying up Twinkies like they’re going out of business… Because they ARE.  Hostess just announced that last night’s Hostess delivery trucks carried the last of their delicious and GMO-filled products.  Say goodbye to Twinkies, Ho-Ho’s, Ding-Dongs, and Wonder bread.

Well, say goodbye right AFTER lunch.  All terrible things in moderation, right?  And if a Zombieland Twinkies scenario coming to life right before your eyes does not give you license to indulge in one, then I weep for your soul.

I went to a local grocery store over lunch to snag a few boxes to Ebay.  (Go ahead, check it out.  One box was already on Ebay for $1500, with the Buy It Now price at $2000.)  All that was left were a few boxes of Cupcakes and Donettes.  It’s like a post-apocalyptic experience. Who knew that a Hostess delivery truck would be one of the four horsemen?

Sprouted seven-grain bread, lettuce, heirloom tomato, and tuna salad for the sandwich.  Tuna salad is sustainably-caught tuna, organic Spectrum brand mayo, celery, red onion, sea salt and pepper.  String cheese and strawberries on the side.  Yum!

Breakfast was a cheesy kale scramble.  I sauteed the kale in 1/2 teaspoon of coconut oil for about a minute, then splashed in a teensy bit of water to steam (with a lid) for another minute.  Then I added the eggs and cooked for another minute or two minutes.  I put it into a little container, sprinkled the julienned cheese on top, and threw it and a fork into my purse.  Twenty-two minutes later I arrived at work with a fresh, still-hot, cheesy and healthy scramble.  Can’t get this kind of flavor and nutrition anywhere else for 5 minutes’ investment!
Now, lunch…

Lunch was in the fridge, packed in my lunch bag already.  Last night we had individual pizzas with coconut flour crusts, and I was bursting with energy after we put the kids to bed at 8:00.  I made raw chocolate banana pudding, raw chia pudding, and raw kale salad.  I’ll be posting recipes soon.

Fun Fact:  The type of fat in the avocado helps your body to absorb up to 300% more of the micronutrients available in the kale and cabbage.  How great is that?

Quick Lunch Post

Today’s lunch is brought to you by the letter “F” and the number -6. 

Factoring in my 22-minute commute, I was already 6 minutes late to work by the time I was looking for something to take for lunch today.  There was nothing ready to grab in the refrigerator.  Thus, today’s sponsor letter.  In the fridge, I see a bin of lettuce.  Can of tuna on the shelf.  I can do this, and I’ll only be 10 minutes late!  I zipped open a can of tuna, chopped a stalk of celery and a slice of onion, added a tablespoon of mayo, and a shake of sea salt and pepper.  Threw some strawberries in a reused baggie.  Toss it all in my lunch bag and hug the kids on the run.  Victory!

Wow, the Chinese Chicken Salad from last night’s dinner makes a really good sandwich!   I toasted my favorite bread, Cybros The Sprouted Bakehouse‘s Seven-Grain sprouted bread and loaded spring greens onto it.  Paired with watermelon and ice water?  Summer lunches rock.

Made myself a veggie sandwich on toasted Sprouted Bakehouse 7-Grain bread.  No condiments, just spring greens, red onion, tomatoes, and half of a buttery avocado.  Ice water and a peach complete this healthy lunch.  Yum!

It was raining cats and dogs on the way up north to the cabin but we still had to have lunch, picnic weather or not!  Richard cut up a large bin of carrots and celery and grilled up some flattened chicken thighs on Thursday in preparation for today’s lunch.  I sliced up a tomato, onion, and avocado, and assembled sandwiches for everyone.  While straddling the boat tongue under the hatch of our Honda Pilot at a gas pump in a downpour.  People, if you are determined to eat real food, I’m here to tell you that with a little preparation, it is possible under ANY circumstances!

I was originally going to make a green salad with tomato and avocado, but realized I’d brought walnuts for my morning oatmeal and a mango to cut up for a snack as well.  So I put them together and saved the tomato for another day and it is delicious!  When I cut the mango I made sure to do it over the salad so all of the juices went on the lettuce.  Let me know what you think if you try this.  Did you use dressing?  I didn’t think it needed one at all.
